Butterbean and pesto burger recipe
I made these burgers the other night when I was looking for something tasty to put in the fresh bread buns I had baked. I have tried numerous vegetarian burger recipes over the years and have often found them to be way to bland or too spicy or just collapsing in texture.
These were the exact opposite they were flavorsome due to the pesto and the butter beans gave the burgers a robust nature. I have adapted these from a recipe in Cook Vegetarian magazine which can be found here.


Butter bean and pesto burgers

Ingredients 
  • 410g can butter beans, drained and rinsed
  • 1 tbsp pesto,
  • 115g wholemeal bread,
  • 1 garlic clove, peeled
  • 1 onion, quartered
  • freshly ground black pepper


Method
1 Preheat the oven to 220C/425F/Gas 7.
2 Place the breadcrumbs, garlic and onion in the food processor and process until finely chopped. Add the beans and pesto in a food processor and pulse until smooth. Season with black pepper.
3 Shape the mixture into 4 large or six small burgers. Place on a lined baking tray. 
4 Bake in the oven for 30-40 minutes until golden brown.
