Tasty Thursday - blueberry crumble cake recipe

55g margarine,
170g caster sugar,
1 egg
125ml milk,
225g self raising flour,
285g blueberries,

For the crumble:
115g sugar,
45g plain flour,
1/2 tsp ground cinnamon,
55g margarine

  1. Preheat oven to 190c gas mark 5. Grease a square 23cm baking tin.
  2. Cream the margarine and sugar, add the egg and beat. Add the milk and mix until blended.
  3. Stir in the flour.
  4. Add the blueberries and stir.
  5. Transfer to the baking tin.
  6. To make the crumble, put the sugar, flour, cinnamon and margarine in a mixing bowl and rub in until the mix looks like bread crumbs.
  7. Sprinkle the topping over the cake mix and bake for 45 minutes.
  8. Great served warm or cold.
