Lemon curd butter cream icing recipe

Ingredients

  • 75g butter
  • 250g icing sugar
  • 3 tbsp lemon curd


Method

  1. Beat the butter with a wooden spoon or electric mixer until creamy. 
  2. Beat in the icing sugar. 
  3. When mixture is light and smooth add the lemon curd and mix. 
  4. Use to sandwich an 8'' cake or to top 12 cupcakes.
